    • ground beef (option to use ground turkey)

    • garlic cloves (minced)

    • seasoning of choice

    • water

    • Toppings

      • avocado

      • 1 tsp sour cream (cottage cheese etc)

Instructions:

  • Preheat oven to 425°F (220°C).

    1. Wash and scrub the sweet potatoes well. Pat dry.

    2. Pierce each potato 4–6 times with a fork. This allows steam to escape.

    3. Optional: Rub lightly with olive oil and sprinkle with a little salt for a crispier skin.

    4. Place directly on the oven rack or on a baking sheet lined with parchment/foil.

    5. Bake for 45–60 minutes, depending on size.

    6. While potatoes are baking, cook ground beef until browned. Cover the pot and allow it to produce it’s own juices, if it doesn’t, pour in water. Let simmer then remove from heat.

    7. Potatoes are ready when a fork or knife slides easily into the center and the skin looks wrinkled.

    8. Remove and let cool for 5–10 minutes before cutting open.

    9. Open potato, mash with a fork and add beef and other toppings.

Quick tip: For meal prep, bake several at once and refrigerate them for easy additions to breakfast, lunch, or dinner.
