Salmon power bowl

Prepare Salmon to your liking. You may choose simply salt and black pepper. Or add a honey mustard glaze or sauce of your choosing.


Ingredients

  • Salmon (a palm or 3-4 oz )

  • Salt ( to taste)

  • Black pepper (to taste)

  • Quinoa (1/4 cup)

  • Roasted sweet potato (fistful)

  • High fiber vegetable (cabbage, cauliflower, broccoli…)


  • Preheat oven to 400F and line a baking sheet with parchment paper or cook on stove top. Salmon cooks quickly.

  • Season salmon with salt and pepper. Transfer to baking sheet then brush each filet with oil or butter or sauce.

  • Bake for 12 minutes or until salmon is flakey. For a darker color and crust, broil for another 2-3 minutes. Caution: When broiling remove parchment paper, it can catch fire. Watch it carefully, burns easily on this setting.

  • Pair this with roasted potatoes, high fiber vegetable, quinoa or whatever sides you like.
