Salmon power bowl
Prepare Salmon to your liking. You may choose simply salt and black pepper. Or add a honey mustard glaze or sauce of your choosing.
Ingredients
Salmon (a palm or 3-4 oz )
Salt ( to taste)
Black pepper (to taste)
Quinoa (1/4 cup)
Roasted sweet potato (fistful)
High fiber vegetable (cabbage, cauliflower, broccoli…)
Preheat oven to 400F and line a baking sheet with parchment paper or cook on stove top. Salmon cooks quickly.
Season salmon with salt and pepper. Transfer to baking sheet then brush each filet with oil or butter or sauce.
Bake for 12 minutes or until salmon is flakey. For a darker color and crust, broil for another 2-3 minutes. Caution: When broiling remove parchment paper, it can catch fire. Watch it carefully, burns easily on this setting.
Pair this with roasted potatoes, high fiber vegetable, quinoa or whatever sides you like.
